Serves: 2-3

Ingredients

1 small pack of chicken breasts (2-3)

Marinade for chicken

3 cloves garlic, chopped or processed in a garlic press

2 tablespoons extra virgin olive oil

1/2 lemon, juiced

1 teaspoon dried oregano

1 cup dry orzo

3 mini Persian cucumbers, sliced

1/4 cup cherry tomatoes, halved

1 tablespoon red onion, chopped finely

2 tablespoons pitted Kalamata olives

2-3 tablespoons hummus (your choice)

1 tablespoon crumbled feta cheese

3 tablespoons tzatziki sauce

1 teaspoon fresh parsley, chopped (garnish)

Directions

After removing chicken from package and patting dry, place chicken in ziplock bag with garlic, extra virgin olive oil, lemon juice and dried oregano. Shake very well until chicken breasts are coated completely in marinade. Set aside until ready to cook. Preheat grill if you are using it. You can also sauté chicken breasts too. Cook dry orzo according to package. Once cooked set aside until ready to assemble. Add a little oil to orzo so it doesn’t stick. While chicken cooks whether you are grilling or sautéing, chop up cucumbers, tomatoes and onion. Set all your veggies aside. Once chicken is cooked thoroughly and no longer pink, take off grill or sauté pan. Place chicken on a cutting board and slice. In a bowl, spoon orzo on bottom, then add chicken, veggies, olives, hummus and tzatziki sauce. Sprinkle crumbled feta cheese on top of orzo and garnish bowl with fresh parsley. Enjoy!
