Happy Saturday foodie friends! If you are looking for a healthy new bowl to try, then look no further! I created a delicious Roasted Cauliflower & Zucchini Bowl with a Creamy Hummus Sauce. The inspiration for this bowl comes from a cruise I went on last month. Spending the day in Grand Cayman, my husband ordered a chicken and cauliflower bowl for lunch. The bowl had brown rice, grilled chicken, chickpeas, cucumbers, cherry tomatoes, shredded carrots, dried cranberries, and a creamy hummus sauce. After our trip, I decided to replicate the bowl back at home. Of course, I played around with different ingredients and flavors adding my own spin to it. I finally came up with a version I really enjoyed. Have a great weekend!
Roasted Cauliflower & Zucchini Bowl with a Creamy Hummus Sauce
Serves: 3
Ingredients
3 zucchini, sliced like half moons
1 head cauliflower, remove stem and leaves, chopped
3 Persian cucumbers, sliced
1 cup cherry tomatoes, halved
1 cup shredded carrots
1/2 cup dried cranberries
1 cup brown or white rice
1/4 cup plain hummus
1 tablespoon lemon juice
1 teaspoon olive oil
1/2 teaspoon paprika
Salt
Pepper
Oil for roasting cauliflower and zucchini
All-purpose or vegetable seasoning for cauliflower and zucchini
Directions
In a small bowl, add hummus, lemon juice, olive oil and paprika. Stir until all ingredients are combined. Add a little water to thin out the hummus sauce. Give it a final stir and set aside. Cook rice according to package and then set aside. Preheat oven to 400 degrees. Chop cauliflower and add to a mixing bowl. Add your favorite veggie or muti-purpose seasoning along with olive oil, salt and pepper. Mix cauliflower until it’s coated in marinade. Transfer cauliflower to a baking sheet and roast for about 25 minutes or until tender and browned. Repeat the same process for the zucchini. Transfer zucchini to a baking sheet and cook for about 15 minutes, or until tender. To assemble, add rice to the bottom of bowl, add cauliflower, zucchini, carrots, cucumbers, cherry tomatoes, dried cranberries and drizzle hummus sauce over all the veggies. Enjoy!
