Happy July friends! I can’t believe we are in July already?! The month of June flew right by! I hope everyone is enjoying their summer so far. This week on my blog, I’m sharing Mare’s Summer Cobb Salad I created. This is the perfect salad for summer! It is light, healthy and full of flavor!! With fourth of July coming up and bbq season, this is the perfect salad to make. It will certainly be a crowd pleaser! Have a great weekend.
Mare’s Summer Cobb Salad
Serves: 2
Ingredients
2 cups romaine lettuce, chopped
1 pound chicken breasts, grilled and sliced (if you don’t want to use grilled chicken you can use rotisserie chicken instead)
1/2 cup cherry tomatoes, halved
1/2 shallot, sliced
2-3 ears corn, husked (feel free to use canned corn if you like)
1/4 cup crumbled gorgonzola cheese
1-2 tablespoons fresh basil, chopped
2 hard boiled eggs, sliced
1/4 avocado, diced
Dressing
1/3 cup olive oil
4 tablespoons red wine vinegar
1 teaspoon lemon juice
1 tablespoon dijon mustard
Salt
Pepper
Directions
In a small mixing bowl add olive oil, vinegar, dijon mustard, lemon juice, salt and pepper. Stir dressing and set aside. Remove husks from corn and place in salted boiling water. Boil corn for about 5 minutes. Remove corn and place on grill for about 10 minutes. Once corn is done remove from grill and place on a large plate. Let corn cool for a few minutes before removing from cob. After corn is cooled, remove from cob and place in a large bowl. In a large salad bowl, add chopped romaine lettuce, cherry tomatoes, shallots, corn, grilled chicken or rotisserie, sliced hard boiled eggs, avocado, gorgonzola cheese and fresh basil. Pour dressing over salad and toss. Serve and enjoy!
