Spicy Broccoli Rabe with Cannellini Beans and Tomatoes
Serves: 4
Ingredients
3 bunches broccoli rabe
1 can cannellini beans
1/2 container cherry tomatoes
1/4 cup hot cherry peppers
1/2 cup chicken broth
3 cloves garlic, sliced
Oil
1/4 teaspoon crushed red pepper flakes
Salt

Directions
Wash broccoli rabe very well and pat dry. Make sure broccoli rabe is dry before placing in pan. It will splatter in the hot oil if not dried very well. Next, cut off stems and cut broccoli in half and set aside. In a large sauté pan over medium-heat, add oil, sliced garlic and crushed red pepper flakes. Let the garlic cook until fragrant or slightly golden. Add in broccoli rabe at this point. Stir broccoli rabe and add in chicken broth. Continue to sauté broccoli rabe. Add in tomatoes, cannellini beans and cherry peppers. Stir mixture until tomatoes start to soften and broccoli rabe is tender. Add a little salt, adjust seasoning accordingly. Give the broccoli rabe mixture one final stir and then take off heat. Serve broccoli rabe in a large bowl. This dish pairs well with grilled chicken, steak or even pork chops. Enjoy!
