Happy Sunday foodie friends! I’m excited to share my first official fall recipe here on my blog. Since I am a huge salad lover, of course I had to create a fun fall salad. My Fall Harvest Pear Salad with Candied Cinnamon Pecans will be your new favorite go-to salad this fall!This salad is packed with so many fall-inspired flavors. I love the sweetness of the candied pecans, creaminess from the gorgonzola cheese, and the juiciness of the pears. Pair this salad with your favorite protein and you have the perfect fall meal. Enjoy the rest of the weekend!
Fall Harvest Pear Salad with Candied Cinnamon Pecans
Serves: 2
Ingredients
Small container butter lettuce
1/2 head radicchio, chopped
1/2 shallot, sliced
1/4 cup crumbled gorgonzola cheese
1 pear, chopped into cubes
Fresh parsley
1/3 cup olive oil
4 tablespoons apple cider vinegar
Salt
Pepper
Candied Pecans
1/4 cup brown sugar
1 tablespoon butter
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup pecans
1/2 teaspoon water
Directions
In a sauté pan add butter, brown sugar, cinnamon, salt and water. Cook for about two minutes or until sugar dissolves. Add in pecans and stir until they are coated in sugar mixture. Take off heat and spread them on a baking sheet with parchmont paper. Set aside. In a small bowl add olive oil, apple cider vinegar, salt and pepper. Whisk salad dressing and set aside. In a large salad bowl, add lettuce, radicchio, pecans, shallots, pears, gorgonzola cheese and parsley. Pour dressing over salad and toss. Serve and enjoy!
