Happy Saturday friends! I hope everyone is enjoying the weekend. If you know me, you know how much I love a good salad. With that being said, this week on my blog, I created a delicious winter salad. My Radicchio and Brussel Sprout Winter Salad is packed with so many amazing flavors! You have the different flavor profiles of the brussel sprouts, radicchio, butter leaf lettuce, fresh dill, parsley and chives. I always love adding fresh herbs to any salad I make. They really elevate the salad. The star of this winter salad is the lemon vinaigrette. If you are looking for a new winter salad, then look no further! Radicchio and Brussel Sprout Winter Salad with a Lemon Vinaigrette
Serves: 2
Ingredients
2 cups butter leaf lettuce, chopped
1/2 radicchio, chopped
3-4 brussel sprouts, sliced
1 tablespoon fresh parsley, chopped finely
1 tablespoon fresh dill, chopped finely
1 teaspoon fresh chives, chopped
Vinaigrette
1/3 cup Extra Virgin olive oil
1/4 cup lemon juice
1 teaspoon Dijon mustard
1 garlic clove, minced or pressed through a garlic crusher
1/2 teaspoon honey
Salt
Pepper
Directions
In a small mixing bowl add all the ingredients for lemon vinaigrette. Whisk vinaigrette until all the ingredients are well combined. Set aside. In a large salad bowl, add lettuce, radicchio, brussel sprouts, and fresh herbs. Pour dressing over salad and toss until salad greens are coated in dressing. Serve and enjoy!
