Happy Tuesday friends! My garden has been producing so many zucchini this summer! I have been trying to create some zucchini recipes. This week, on my blog I have a delicious Grilled Zucchini Salad to share. For this salad, I used arugula. It is my favorite and I love adding it to salads. I added some shallots, pistachios for a crunchy texture and crumbled feta cheese. Lastly, I added some parsley and basil from my garden. Fresh herbs really elevate a dish and add some nice color too! I drizzled some extra virgin olive oil, lemon juice, salt and pepper on top of the salad. This salad can easily be paired with grilled chicken, steak or even fish. Enjoy!
Grilled Zucchini Salad
Serves: 2
Ingredients
1 zucchini, cut into rounds (1/4 inch thick)
1/2 container arugula
1 small shallot, sliced
1/4 cup pistachios
2 tablespoons crumbled feta cheese
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
Extra virgin olive oil
1/2 lemon, juiced
Salt
Pepper
Directions
Preheat grill to medium-high heat. While the grill is heating up, wash the zucchini and cut off both ends. Slice the zucchini into rounds, about a quarter inch think. This will ensure that the zucchini cooks evenly without becoming mushy. In a large bowl, add zucchini, olive oil, salt and pepper. Toss zucchini gently to make sure it all gets coated in marinade. Let the zucchini marinade for about 10-15 minutes. Once grill is ready, place zucchini on grates. Grill zucchini for about 3-4 minutes on each side, or until you see grill marks. Try not to over cook zucchini, you don’t want them to lose their firmness. Place cooked zucchini on a plate and set aside. In a large bowl add arugula, olive oil, lemon juice, salt and pepper. Toss until arugula is coated evenly. To the arugula, add shallots, pistachios, feta cheese and fresh herbs (parsley and basil). Add in zucchini and give salad one final toss. Adjust seasonings accordingly and enjoy!
