Halloween Drinks & Treats

Happy Tuesday foodie friends! Just a few more days till Halloween! If you are hosting, or attending a Halloween party I have some spooky ๐Ÿ‘ป recipes for you! Even if you are not hosting or attending a Halloween party, you can still make these recipes. Happy Halloween ๐ŸŽƒ

Spiced Apple Cider Margarita

Serves: 1

Ingredients 

1/2 gala or honey crisp apple, cubed 

1 ounce spiced apple cider 

2 ounces tequila 

1/2 ounce lime juice 

1/2 teaspoon cinnamon 

1 teaspoon coarse salt 

Honey or caramel sauce 

Cinnamon stick (optional) 

1 ounce triple sec

Directions 

On a small shallow plate add salt and cinnamon. Mix both together. Around the rim of the margarita glass drizzle either honey or caramel sauce. This gets messy, so do it over a plate. Set glass aside. In a shaker or separate glass add apples, spiced apple cider, lime juice, tequila, and triple sec. Shake or stir very well. Pour into glass and garnish with cinnamon stick. 


Apple Pie Egg Rolls

Serves: 15

Ingredients 

4 cups apples, peeled and diced (approximately 4 apples) 

4 tablespoons sugar 

4 teaspoons flour 

1/2 teaspoon powdered cinnamon 

1 teaspoon lemon juice 

15 egg roll wrappers 

Oil 

Directions

In a large bowl combine diced apples, sugar, cinnamon and lemon juice. Stir all the filling ingredients until well combined. Place about a tablespoon of the filling in the center of the egg roll wrapper. Fold in the sides and roll the wrapper tightly. Use a little bit of water on your finger to secure the tip of the wrapper. I baked my apple pie egg rolls in the oven at 350 degrees for about 10 minutes or until egg rolls turn golden. If you wan to fry egg rolls, cook them for about 5 minutes or until golden brown and crispy. Once egg rolls are done cooking place on a plate and dust with powdered sugar and drizzle with caramel sauce. Add any other toppings of your choice. 


Spooktacular Cake Balls

Yields: 25 

Ingredients 

1 box cake mix 

1/2 cup frosting ( I used vanilla) 

Sprinkles or any other edible decoration 

2 bags of chocolate chips 

Directions 

Bake cake according to directions on box first. Once cake cools , scoop out cake from pan and place in a large mixing bowl. Add frosting to cake and stir. If cake is too dry, add more frosting. Stir until well combined. Take a cookie scooper or your hands and form about one inch cake balls. Place all cake balls on a tray and put in the freezer for about 20-30 minutes. Melt chocolate chips in microwave. Dip cake balls in melted chocolate and place on a tray. Add sprinkles or any other decorations you are using. Once all your cake balls are dipped in chocolate and decorated, place in freezer for about 10 minutes. Take out cake balls and serve!
