Happy Thursday foodie friends! It’s finally summer, which means more summer themed dishes and drinks coming your way 🙂 I am continuing my lemon themed dishes for this month. I have been on a salad kick lately and created the most delicious arugula salad! My Lemony Arugula Salad is packed with so many different flavors. You have the peppery taste from the arugula, saltiness from the prosciutto, and a burst of citrus from the lemon. This salad is perfect for any bbq, meal during the week, or if you need a new salad recipe ; I hope you enjoy this amazing salad!
Lemony Arugula Salad with Crispy Prosciutto
Serves: 2
Ingredients
2 cups of arugula
1 1/2 tablespoons shaved parmesan cheese
3 slices of prosciutto
2 tablespoons croutons (your favorite ones, or feel free to make your own)
1/2 teaspoon salt
Pinch of pepper
1 small lemon, halved and juiced
1-2 tablespoons of extra virgin olive oil
oil for sauteing
Instructions
In a small mixing bowl add extra virgin olive oil, juice of lemon, salt and pepper. Whisk dressing together and set aside. Heat up a small sauté pan with oil and add prosciutto. Cook prosciutto for about five minutes, or until prosciutto gets crispy. Once the prosciutto gets crispy, take pan off heat. On a cutting board roughly chop prosciutto. Set aside chopped up prosciutto. In a salad bowl, add arugula, shaved parmesan cheese, chopped prosciutto and croutons. Lastly, pour dressing over salad and toss until dressing is combined. Serve and enjoy!

Hi Meredith! I’m Peggy (your aunt Kathy’s friend). I love your salad recipes because I love eating salad, especially during the summer. I’m not a great cook but I make a lot of salads and I sometimes add chicken to them. Keep those salad recipes coming!

not a rocket/ arugula fan, but I can imagine this would be great with any leafy green. The Proscuitto looks so crisp. How did you not eat it all before you even made this !!

I know not everyone is an arugula fan. You can use your favorite type of greens to substitute the arugula. It is very good!! My new favorite! The prosciutto is the best part lol! I made it again the next day.
