Winter Spinach Salad

Happy Thursday everyone! I hope you are excited for this week’s new recipe as I am!! I decided to create a Winter Spinach Salad with a Honey Dijon Vinaigrette. This sweet and savory spinach salad is topped with fresh blueberries, creamy gorgonzola cheese, shallots, and candied pecans. The honey dijon vinaigrette really brings this salad together. This salad is great to make for any type of gathering, a quick lunch or even dinner. Enjoy the rest of the week and have a good weekend!

Winter Spinach Salad

Serves: 2-3

Ingredients

4 ounces fresh spinach

3/4 cup fresh blueberries

1 small shallot, sliced thinly

1/2 cup candied pecans (if you don’t like candied pecans feel free to use candied walnuts or any another nut of your choice)

1/3 cup crumbled gorgonzola cheese (if you don’t like gorgonzola cheese, feel free to use either goat cheese or any other cheese of your choice)

1/3 cup extra virgin olive oil

1/4 cup balsamic vinegar

2 tablespoons honey

1 teaspoon dijon mustard

Salt

Pepper

*Feel free to add protein to this salad such as, chicken, salmon, shrimp, etc…

Directions

In a small bowl whisk together the olive oil, balsamic vinegar, honey, dijon mustard, salt and pepper. After salad dressing is mixed well set aside. In a large bowl add spinach, blueberries, shallots, candied pecans and crumbled gorgonzola cheese. Pour honey dijon vinaigrette over salad and toss well. Make sure salad is evenly coated in salad dressing. Serve and enjoy!
