Autumn Harvest Salad

Happy Friday! I hope everyone is doing well. Fall has always been one of my favorite seasons. With the cool crisp in the air, leaves changing color, it is starting to feel like fall! This week on my blog, I decided to create the perfect Autumn Harvest Salad. This delicious salad is nothing short of flavor! You have arugula, the sweetness of the apples, nutty and buttery flavor of the pecans, creaminess from the gorgonzola cheese and shallots. This salad is dressed in a maple cider vinaigrette. You can pair this fall salad with grilled chicken, steak or fish. Have a great weekend and stay tuned for more fall recipes 🙂

Autumn Chopped Salad

Serves: 2

Ingredients

1 container arugula (if you are not an arugula fan, feel free to use other salad greens)

1/2 cup pecans

1 gala apple, chopped

1/4 cup crumbled gorgonzola cheese

1 small shallot, chopped

1/2 cup olive oil

1/4 cup Apple cider vinegar

1 teaspoon Maple syrup

Salt

Pepper

Directions

In a small bowl add olive oil, apple cider vinegar, maple syrup, salt and pepper. Stir salad dressing and set aside. In a large salad bowl, add arugula, apples, shallots, pecans, and gorgonzola cheese. Pour salad dressing over salad and toss to combine. Serve and enjoy!
