Happy Monday friends! Lately, I have been testing some new bowls. This week on my blog I wanted to share one. I made a Chickpea Quinoa Bowl with a Spicy Feta Sauce. So many amazing flavors going on. From the marinated chickpeas, fluffy quinoa, fresh cucumbers, tomatoes, olives, and creamy feta. The spicy feta cheese sauce is truly the star of this dish! Definitely do not skimp on the sauce. As I was making the sauce it reminded me so much of a Greek dip called tirokafteri. If you are not a huge fan of spicy peppers you can also use roasted red peppers instead. Even though this bowl is vegetarian you can certainly add grilled chicken or fish to it. Have a great week!
Chickpea Quinoa Bowl with a Spicy Feta Sauce
Serves: 2
Ingredients
1/2 cup cooked quinoa
2 Persian cucumbers, chopped
1/2 cup cherry tomatoes, halved
1/2 cup pitted kalamata olives & green olives
1/2 cup crumbled feta cheese
Marinated Chickpeas
1 can chickpeas, rinsed and drained
1/4 cup extra virgin olive oil
1 clove garlic, chopped finely or processed through a garlic crusher
1/2 teaspoon crushed red (optional)
Spicy Feta Sauce
1 garlic clove
1 scallion, (green & white parts) sliced
1 1/2 teaspoons Calabrian chili paste
1 tablespoon lemon juice
Salt & pepper
2 tablespoons extra virgin olive oil
8 ounces feta cheese
1/4 cup Greek yogurt
Directions
For the marinated chickpeas, add all the ingredients to a bowl and stir. Make sure the chickpeas are coated in olive oil mixture. Set aside until Bowl is ready to be assembled.
For the spicy feta sauce, to a blender, add feta cheese, yogurt, Calabrian chili paste, garlic, salt, & pepper. Blend all ingredients until smooth. Stream in olive oil and lemon juice while blender is on. Continue blending mixture, scrape down the sides. Make sure mixture is silky smooth. Transfer mixture to a bowl and set aside.
In a large bowl add quinoa, chickpeas, olives, cucumbers, cherry tomatoes, feta cheese and drizzle spicy feta cheese sauce over the top. Enjoy!
