A Summer at the Farmers Market: August 2026

August brought me back to one of my favorite places this summer—the Chester Farmers Market. By this point in the season, the market was overflowing with some of the best late-summer produce, and I came home with a colorful haul of eggplants, corn, cucumbers, green bell peppers, and tomatoes.

One of the things I have loved most about visiting farmers markets this summer is seeing how the produce changes from one visit to the next. Each trip brings something different to discover, and lately, I have found myself letting whatever looks best at the market inspire what I cook at home.

Cooking With the Season

The more I have shopped this way, the more I have noticed a shift in the dishes I have been creating and cooking. They have been some of the freshest, easiest, and most nutrient-dense meals—and so much of that comes down to starting with produce that is at its peak.

There really is a remarkable difference when fruits and vegetables are eaten in season. The corn is sweeter, the tomatoes are more flavorful, and even vegetables that might normally play a supporting role can become the inspiration for an entire dish. When the ingredients already taste this good, I find that they don’t need much to turn them into something delicious.

It has made cooking this summer feel wonderfully simple: find beautiful produce, bring it home, and let it lead the way.

From the Market to the Table

One of my favorite finds during my August visit was the eggplant, which became the inspiration for my Grilled Eggplant with Salsa Verde. The eggplant is simply grilled and served with a fresh salsa verde made with parsley, basil, capers, garlic, and olive oil. It’s exactly the kind of recipe I have been gravitating toward this summer—fresh, uncomplicated, and centered around one really good seasonal ingredient.

Between the eggplant, corn, cucumbers, peppers, and tomatoes I brought home in August, there has been no shortage of inspiration in my kitchen.

More Summer Still to Come

As August comes to a close, I am realizing just how much these farmers market visits have influenced the way I have cooked this summer. Instead of beginning with a recipe and shopping for the ingredients, sometimes I have done the opposite—starting with what is fresh and in season and figuring out what I want to make from there.

And I’m not quite ready to wrap up this series yet.

The farmers market season isn’t over yet. There is still more produce to be picked, more recipes to be created and made, and new discoveries waiting around the corner. If this summer has taught me anything, it’s that some of the best meals begin without much of a plan at all—just a trip to the market, a basket of seasonal produce, and a little inspiration.
