Hello friends and happy June! I’m so happy that summer is this month which means, barbecues, more time with family and friends, being outside and enjoying summer 2021! I’m excited to feature a recipe that my husband Bobby came up with. Last memorial day weekend, my husband created this amazing pasta salad to go along with what we were barbecuing. It end up being a huge hit and he made it for our family and friends. If you are looking for the perfect side dish for your summer barbecues, look no further! This pasta salad will be on repeat all summer long again. I hope you enjoy this delicious pasta salad just as much as my husband and I do. Summer Penne Pasta Salad
Serves: 4-6
Ingredients
1 pound Penne pasta
2 ounces Mozzarella balls
2 tablespoons balsamic vinegar
1/2 cup chopped basil
1 tablespoon garlic seasoning (feel free to use your favorite)
1 1/2 jars sun dried tomatoes, roughly chopped (either marinated or plain is fine)
1 tablespoon extra virgin olive oil
drizzle of balsamic glaze (your favorite one)
Instructions
Cook pasta according to package. Once pasta is al dente, strain and set aside. Toss pasta with a little oil so it doesn’t stick. Chop basil and sun dried tomatoes and set aside. In a large bowl, add pasta, sun dried tomatoes, mozzarella balls, balsamic vinegar, garlic seasoning, basil and olive oil. Stir until well combined. Lastly, drizzle balsamic glaze on top. Serve and enjoy!
**Note: This pasta salad is served cold not hot
