Ingredients
1/2 cup orzo
4 shrimp, deveined and cleaned ( you can also buy shrimp that are ready to be cooked)
1 roma tomato, chopped
2 mini cucumbers, chopped
1 tablespoon feta cheese, crumbled
2 teaspoons extra virgin olive oil
1 teaspoon of seafood seasoning of your choice
2-3 tablespoons of hummus (feel free to use a flavored hummus if you don’t like plain)
1 tablespoon parsley, chopped (optional) (I just used it for garnish)
1/2 teaspoon of red wine vinegar
Salt & pepper

Instructions
Devein and clean shrimp thoroughly if you are not using already cooked shrimp. Once are done cleaning shrimp, place shrimp in a ziplock bag and add seafood seasoning, olive oil, salt and pepper. Shake bag very well and set aside in refrigerator to marinate for about 10-15 minutes. Chop tomato and cucumbers for your greek salad. Place veggies in a small bowl and add olive oil, red wine vinegar, salt and pepper. Set aside until the end when you are ready to assemble bowl. In a small pot boil water for orzo. Sauté a little oil in a pan on medium heat. Take your orzo and add it to the pan. *A friend of mine told me about toasting orzo and how good it tastes. It really brings the flavor of the orzo to the next level. Toast orzo for about 5-8 minutes or until orzo starts to changer color. When orzo is toasted, transfer to pot of boiling water and cook for 8-10 minutes. When orzo if fully cooked drain and set aside. Take shrimp out of the refrigerator and sauté in a pan or you can even grill them if you prefer. If you are sautéing them, cook them for 2-3 minutes on each side, flipping only once. After shrimp is cooked transfer to a plate. How to assemble bowl: take toasted orzo and plate half of it on one side of your bowl, place your shrimp on top of the orzo. On the other side of the bowl, place chopped greek salad, next to that add hummus. Sprinkle crumbled feta cheese on top of greek salad. Lastly, garnish bowl with parsley if you choose to do so. Enjoy!
