Happy Friday friends! I’m excited to feature more summer recipes here on my blog! This week I’m bringing you an asian style salmon with a delicious & refreshing mango cucumber salad. If there is one type of fish I love, it’s salmon! Aside from all the amazing health benefits of salmon I also love how versatile it is when preparing it.
Asian Style Salmon with Mango Cucumber Salad
1 filet of salmon
2 tablespoons soy sauce
1 teaspoon sriracha sauce (add more for an extra kick)
1 lime, halved
1 glove garlic
1 teaspoon toasted sesame oil
2 cups mangoes, chopped
1/2 small red onion, chopped
2 mini Persian cucumbers, chopped
1 tablespoon fresh cilantro, chopped
1/2 teaspoon salt
In a small bowl, whisk soy sauce, garlic, 1/2 lime juiced, toasted sesame oil and sriracha sauce. In a ziplock bag, place salmon and pour marinade in bag. Shake bag with salmon and marinade until salmon is evenly coated. If you have time, marinade the salmon overnight. Don’t worry if you don’t have time to marinade salmon overnight. You can marinade salmon for 15-20 minutes until it is time to cook it. If you prefer to grill salmon do that, or if not cook it in a sauté pan. If you cook it in a sauté pan add a little oil to a hot pan. Cook salmon skin side down in pan for about 10-12 minutes, or until salmon is pink.
In a large bowl, add mangoes, cucumbers, red onion, cilantro, other half of lime juiced and salt. Stir ingredients until we’ll combined and coated in lime juice. Spoon mango salad on a plate and place salmon on top. Feel free to garnish with lime on top if you have any remaining. Enjoy!
