Ingredients
1 lb penne pasta
1 pound Italian sausage (if you don’t want to use Italian sausage feel free to use another type)
2-3 cloves garlic, sliced
1/2 cup sun-dried tomatoes, sliced (marinated or plain)
1 (6 ounce) bag baby spinach
1/4 cup grated parmesan cheese
oil
Salt and pepper
1 tablespoon parsley, chopped (optional)

Heat oil in a skillet over medium heat until hot and add in sausage. Cook sausage thoroughly until no longer pink for about 5-10 minutes. As you are cooking sausage break it up into small pieces. Once sausage is cooked thoroughly remove from heat and transfer to a bowl until later. Cook pasta according to directions on box. After pasta is done cooking add oil so pasta does not stick together. Set pasta aside once it is done cooking. In another skillet over medium heat add oil, garlic and spinach. Saute spinach for a couple of minutes until it starts to wilt. Add in sun dried tomatoes and cannellini beans. Stir mixture very well and season with salt and pepper. Add in cooked penne pasta to skillet and stir mixture making sure everything is well combined. Lastly, add in grated parmesan cheese and parsley as a garnish. Serve pasta and enjoy!
