Happy Friday! I hope everyone is doing well. I have been craving a really good salad lately and came up with a chopped salad recipe. I love this new chopped salad that I created and made it twice in a row! My husband really enjoyed this chopped salad too! This Italian chopped salad is bursting with so much flavor. The salad greens are dressed in a simple red wine vinaigrette, combined with mozzarella, grated parmesan cheese, chickpeas, salami, roasted red peppers, and other veggies. Fresh parsley is added to this salad, which takes it to another level of flavor. This salad is perfect for lunches during the week as well as dinner. Add your favorite protein to this delicious Italian chopped salad for a hearty dinner. Have a great weekend 🙂

Italian Chopped Salad
Serves: 2
Ingredients
2 romaine lettuce hearts (I used Andy Boy) chopped
1 can chickpeas, rinsed
1/4 cup roasted red pepper strips
1/4 cup pitted green olives, chopped
1/4 cup pitted black olives, chopped
4 slices of Genoa Salami, cut in half or julienned
1 large tomato, chopped
1/2 cup mozzarella, chopped into small cubes
1-2 mini Persian cucumbers, chopped
1 tablespoon grated parmesan cheese
2 tablespoons fresh parsley, chopped
1 lemon
Salad Dressing
1/3 cup Extra virgin Olive Oil
2-3 tablespoons red wine vinegar
1 teaspoon dijon mustard
Salt
Pepper
Directions
In a small bowl, whisk together extra virgin olive oil, red wine vinegar, dijon mustard, salt and pepper. Once you are done preparing dressing, set aside. To a large bowl, add your chopped romaine, chickpeas, roasted red peppers, green and black olives, salami, tomato, cucumbers, and mozzarella. Pour salad dressing over salad. Squeeze half of a lemon and toss salad. Make sure salad is evenly coated in dressing. When you are ready to serve sprinkle with parmesan cheese and garnish with chopped parsley and serve. Enjoy!
