Farmers Market Salad

Happy Friday friends! I have another delicious salad to share with you all this week. The inspiration for this weeks recipe came from my love for farmers markets. There is nothing like going to a farmers market on the weekend during the summer! I love checking out all the local famers markets in my area. You can’t beat the fresh produce from local farms. This week I created a Farmers Market Salad with fresh arugula, blueberries, tomatoes, creamy goat cheese and crunchy walnuts all dressed in a creamy balsamic dressing. This is the perfect salad for summer, especially on those hot summer days. Have a beautiful weekend!

Farmers Market Salad

Serves: 2

Ingredients

2.5 ounces arugula or greens of your choice

3/4 cup blueberries

1/2 cup cherry tomatoes, halved

2 tablespoons crumbled goat cheese

1/4 cup walnuts

Dressing

1/4 cup mayonnaise

1/4 balsamic vinegar

1/4 cup extra virgin olive oil

1 teaspoon dijon mustard

1 teaspoon honey

1 garlic clove

1/2 teaspoon salt

1/2 teaspoon pepper

Directions

In a small food processor combine all the ingredients for the salad dressing. Once salad dressing is made set aside in a bowl or salad dressing jar. In a large bowl, combine arugula, blueberries, tomatoes, goat cheese and walnuts. Pour dressing over salad and toss. Serve and enjoy!
