Happy Thursday! I hope everyone is having a good week so far. Now that the warmer weather is here to stay, I have been testing out some summer recipes. I created a Loaded Grilled Romaine Salad this week. If you are a fan of grilled romaine salads like myself, then this recipe is for you! There’s something about the flavor of grilled romaine. As the romaine gets grilled, the leaves get wilted, which makes them tender and delicious. I added parmesan crisps, crispy prosciutto, frizzled onions, and a drizzle of creamy Cesar dressing. This is the perfect side dish to serve this summer at family barbecues, gatherings or even weeknight dinners. Have a great weekend!
Loaded Grilled Romaine Salad
Serves: 2
Ingredients
1 head of romaine lettuce, halved
2 tablespoons oil
3-4 Parmesan crisps, crumbled
4 slices crispy prosciutto (cook in frying pan or bake in oven to get prosciutto crispy)
2 tablespoons frizzled onions
Cesar Dressing
1 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon cracked black pepper
1/4 cup grated parmesan cheese
1 tables extra virgin olive oil
1 garlic clove
1 teaspoon dijon mustard
Directions
To make the dressing, add mayo, lemon juice, dijon mustard, garlic, pepper and parmesan cheese to a small food processor. Slowly stream olive oil to food processor until a thickened dressing is formed. Set dressing aside for later. Wash head of romaine lettuce and pat dry. Cut romaine lettuce in half and brush the cut sides with oil. Preheat grill to 400 degrees Fahrenheit . Grill each side for about 1-2 minutes. Once romaine is done cooking on grill, transfer to a plate. Drizzle Cesar dressing over grilled romaine, top with frizzled onions, crispy prosciutto and parmesan crisps. Top with extra Cesar dressing if desired and enjoy!
