Fiesta Corn Salad

Happy Friday! I hope everyone is doing well and enjoying their summer. I have been craving light, and refreshing summer salads. This week on my blog I am sharing my Fiesta Corn Salad I created. This salad is full of so many amazing flavors, from jalapeños, shallots, fresh basil, Cotija cheese and freshly squeezed lime juice. I paired this salad with grilled chicken, but you can also serve this corn salad with steak, salmon, shrimp or just by itself. This salad would be perfect served at your next taco night! Fiesta Corn Salad

Serves: 3

Ingredients

5 ears of corn, husked

1 shallot, chopped

1 jalapeño, chopped

1/4 cup fresh basil, chopped

1 lime, juiced

1 teaspoon hot sauce (your favorite)

1/2 teaspoon salt

2-3 tablespoons Cotija cheese

1/4 cup mayonnaise

Directions

Remove husks from corn and place in salted boiling water. Boil corn for about 5 minutes. Remove corn and place on grill for about 15-20 minutes. Once corn is done remove from grill and place on a large plate. Let corn cool for a few minutes before removing from cob. After corn is cooled, remove from cob and place in a large bowl. Add shallot, jalapeño pepper, basil, lime juice, salt, hot sauce, Cotija cheese and mayonnaise. Stir until corn is well combined with mayonnaise mixture. Serve immediately or store in refrigerator. Enjoy!
