Mare’s Favorite Arugula Salad

Happy Thursday! I don’t know about you, but I feel like this summer is flying by!! I’m not ready for fall quite yet, so I’m soaking up these last few days of summer. If you know me pretty well, I love a good salad! They have always been my go-to for lunch. When it comes to creating a salad the possibilities are endless. This week on my blog, I’m sharing a delicious and refreshing salad I created a couple weeks ago. Arugula is one of my many favorite greens to use as a base for salads. I had to add the red and yellow cherry tomatoes because they remind me of summer. Cucumbers are always a good staple in any kind of salad as well as chickpeas. I can’t forget about my love for feta cheese! If you are not a fan of feta cheese, goat cheese works too. The dressing that ties this salad together is so simple, yet so delicious. Mare’s Favorite Arugula Salad

Serves: 2

Ingredients

4 cups arugula

1 cup cherry tomatoes, halved

1/2 cup chickpeas, rinsed and drained

1 shallot, chopped ( feel free to substitute a red onion if you don’t like shallots)

2-3 mini Persian cucumbers, sliced

1-2 tablespoons feta cheese, crumbled

Salt

Pepper

1/3 cup extra virgin olive oil

1/4 cup balsamic vinegar

1 teaspoon fresh basil, chopped

Directions

In a small bowl add extra virgin olive oil, balsamic vinegar, salt and pepper. Stir salad dressing ingredients together until well combined. Set salad dressing aside. In a large bowl, add arugula, chickpeas, shallots, cherry tomatoes, cucumbers and feta cheese. Pour dressing mixture over salad and toss until salad is coated in dressing. Serve in your favorite salad bowl and enjoy!

*Note: If you would like to add protein to this salad grilled chicken, steak, or salmon would go perfectly.
