Tuscan Chicken with Creamy Sun-dried Tomato and Spinach Orzo

Happy Friday foodie friends! I hope everyone is doing well and having a good week. Now that fall is officially in the air I have some new recipes to share! This week on my blog, I created a Tuscan Chicken with Creamy Sun-dried Tomato and Spinach Orzo. There’s nothing like enjoying a bowl of creamy orzo and chicken on a cool fall night! This recipe is fall comfort food at its finest. If you need a family friendly recipe for those busy week nights, then look no further. This recipe is great as a quick meal to put together as well. Tuscan Chicken with Creamy Sun-dried Tomato and Spinach Orzo

Serves: 4

Ingredients

1 pound chicken breasts or thighs if you prefer

1 cup cooked orzo (follow directions according to package)

1 package of sun-dried tomatoes

1 small container fresh spinach

1/4 cup grated parmesan cheese

3 cloves garlic, chopped

1 shallot, chopped

1/2 teaspoon crushed red pepper flakes (optional)

Salt

Pepper

1 tablespoon Italian seasoning

2 tablespoons butter

Oil

1/4 cup heavy cream

1/2 cup chicken broth

Fresh basil for garnish (optional)

Directions

Season chicken with Italian seasoning and either grill or sauté until thoroughly cooked. The internal temperature of the chicken should read 165 degrees. Once chicken is done cover and set aside. To a sauté pan over medium-high heat, add oil and butter. Stir in garlic and shallots and cook until softened or for about 2-3 minutes. Add spinach, sun-dried tomatoes and chicken broth. Season with salt and pepper. Bring to a boil and add in orzo. Continue to stir mixture. Slice chicken and add to sauté pan. Stir and lower heat, add in parmesan cheese and heavy cream. Stir mixture until you get a creamy consistency. Feel free to garnish with basil. Serve and enjoy!
