Winter Apple Salad with Honey Mustard Vinaigrette

Happy Saturday! I can’t believe we are only 8 days away from Christmas?! I have been busy recipe testing some delicious Christmas recipes! This week on my blog I’m sharing a Winter Apple Salad with a Honey Mustard Vinaigrette. This salad is nothing short of flavor!! You have the sweetness from the apples, creaminess from the Gorgonzola cheese, crunchy texture from the pecans and a subtle and sweet flavor from the shallots. All dressed in a creamy and tangy honey mustard vinaigrette. This is the perfect salad to serve with Christmas dinner or any upcoming holiday gathering.

Winter Apple Salad with Honey Mustard Vinaigrette

Serves: 2

Ingredients

1 container mixed salad greens

1 apple, chopped, (I used gala, but feel free to use your favorite)

1/4 cup pecans, chopped

1/2 shallot, thinly sliced

1/2 cup crumbled Gorgonzola cheese

3/4 cup dijon mustard

1/4 cup whole grain mustard

1/2 cup mayonnaise or yogurt

1/2 cup honey

Salt

Pepper

Directions

In a small bowl, combine the dijon mustard, whole grain mustard, mayonnaise or yogurt, honey, salt and pepper. Whisk the vinaigrette and then set aside. In large bowl, add mixed greens, apple, pecans, shallot, and Gorgonzola cheese. Lastly, pour dressing over salad greens. Toss salad until greens are evenly coated in dressing. Serve and enjoy!
