Thai Inspired Crispy Rice Bowl

Happy Saturday foodie friends! I wanted to switch things up a bit and share a Thai recipe on my blog. It has been a while since I created an Thai dish, but hoping to share more! If you are a huge fan of bowls, then this recipe is especially for you! This bowl is packed with so many amazing flavors. From the crispy rice, crunchy cucumbers, sweet tomatoes, cabbage, carrots, and chopped cashews to top it off. Pair this bowl with salmon, chicken or steak and you have the perfect meal! Enjoy the weekend!

Thai Inspired Crispy Rice Bowl

Serves: 2

Ingredients

Crispy Rice

2 cups cooked jasmine rice cooled

2 teaspoons soy sauce

2 tablespoons chili onion crunch (Trader Joe’s has a good one)

1 teaspoon toasted sesame oil

For the bowl

1/2 cup cooked white rice (jasmine rice)

2 cups cabbage

2 cups carrots

1/2 cup cherry tomatoes, halved

1/2 cup cucumbers, halved

1 bunch scallions, chopped

1 tablespoon cilantro, chopped

1/4 cup cashews, chopped

Dressing

1/4 cup toasted sesame oil

1/4 cup Olive oil

1/4 cup lime juice

1 garlic clove, chopped

1 teaspoon ginger, grated

2 teaspoons sriracha

2 tablespoons rice wine vinegar

Directions

Preheat oven to 400° F. Line a baking sheet with parchment paper. Set aside. In a bowl, add cooked jasmine rice, toasted sesame oil, soy sauce, and chili onion crunch. Stir until rice is coated in mixture. Spread rice flat on baking sheet. Bake for about 30-40 minutes. Remove baking sheet from oven once rice gets crispy and set aside. In a small bowl add in ingredients for dressing. Whisk dressing ingredients very well and set aside. To assemble bowl add white rice, crispy rice, veggies, cashews, scallions and cilantro. Lastly, pour dressing over crispy rice and veggies. Stir and enjoy!
