Happy Wednesday friends! This week I am featuring my last brunch recipe for the month of April. It was a lot of fun creating all these delicious brunch recipes. Of course I had to save the best recipe for last. Tacos are my favorite and I had to feature some type of taco recipe in my brunch series. If you are a taco lover like myself, this recipe is for you! You can’t go wrong with cheese, eggs, bacon and jalapeño peppers! Stay tuned for some exciting summer inspired recipes next month as well as another collaboration.
Spicy Cheesy Bacon Breakfast Tacos
(2) Small tortillas ( your favorite tortillas you prefer)
1 teaspoon butter
2 tablespoons of shredded cheddar cheese
3 strips of cooked bacon, chopped
1 jalapeño pepper, sliced (if you don’t like jalapeño peppers you can omit)
Salt and pepper
In a medium bowl, whisk together the eggs. Melt the butter in a small pan over medium heat, until the butter coasts the whole pan and starts to foam. Add the eggs to the pan and immediately reduce heat to medium-low. Using a spatula, gently push the eggs from one end of the pan to the other. When the eggs are cooked thoroughly, remove from the heat. Transfer scrambled eggs to a small bowl. Place tortillas on a flat plate and spoon egg mixture in the middle of tortillas. Start to spread out your eggs a little on tortillas. Next, take the chopped bacon and sprinkle it on top of eggs. Sprinkle shredded cheese on top of bacon. Lastly, add a couple of sliced jalapeño peppers on each tortilla if you choose to do so. If you want to melt the shredded cheese a little feel free to place tacos in the oven for a few minutes or the microwave. Pour yourself a mimosa, because after all it is #brunch. Enjoy!
