Tropical Pineapple Salsa

Happy Wednesday and Cinco de Mayo! I hope everyone enjoyed my brunch recipes that I shared last month. In case you missed any of them feel free to look back at my posts last month. Any one of those recipes would be perfect to make for Mother’s Day this Sunday 😉 I will be sharing some delicious summer inspired recipes this month. With summer coming up next month I have lots of fun, fresh and flavorful recipes in store! Today I am featuring my Tropical Pineapple Salsa. It is light, refreshing and perfect for summer. This would be a great appetizer to make for Memorial Day weekend, summer barbecue or any other gathering.

Tropical Pineapple Salsa

Serves: 2-3

Ingredients

1 pineapple, cut into cubes (if you don’t want to cut up an actual pineapple, purchase already cut pineapple chunks)

Juice from 1 lime

1 jalapeño, chopped (remove seeds)

1 roma tomato, chopped

1/2 small red onion, chopped

1 tablespoon cilantro, chopped

1/2 teaspoon salt

Instructions

In a small bowl combine pineapple chunks, tomato, jalapeño pepper, red onion, cilantro, lime juice and salt. Mix all the ingredients together. Serve with your favorite tortilla chips and enjoy!
