Happy Wednesday! This week’s brunch recipe I am featuring is avocado toast, but with a twist. I decided to make this avocado toast greek style. If you are an avocado toast lover like me, you will definitely want to try this recipe! The combination of red and yellow heirloom tomatoes, feta cheese, cucumbers and dill bring out so many greek flavors. This recipe was very easy and quick to make! I hope you enjoy it as much as I did.
Greek Avocado Toast
Serves: 2
Ingredients
2 slices of ciabatta bread (if you don’t like your ciabatta thick like mine feel free to cut it thinner)
2 slices of a heirloom tomato
2 slices of a yellow heirloom tomato
1 ripe avocado cut in half
2 mini cucumbers, sliced
2 tablespoons of crumbled feta cheese (my favorite is Dodoni)
Fresh dill, roughly chopped
Salt
Half of 1 lime
Instructions
Preheat oven to 350 degrees. Cut two slices of ciabatta bread and place on a small baking sheet for about 5-8 minutes, or until bread starts to get toasted. Once bread is toasted, take it out of the oven and set aside. In a small bowl add avocado, salt, and half of a lime. Mash avocado until you have a smooth consistency. Spread avocado mixture on ciabatta bread, place tomatoes and cucumbers on toast. Sprinkle with feta cheese and dill on top. Enjoy!
